Why Does Chocolate Melt?

Chocolate is soft and yummy. It has a special fat called cocoa butter. Cocoa butter melts very easy. When it gets hot, chocolate turns into a gooey mess. That is not good for you or the store.

Chocolate melts at only 30°C to 35°C (86°F to 95°F). If it gets hotter, it melts more. Even a warm day, 25°C (77°F), can make chocolate soft. Once chocolate melts, it gets white spots from fat bloom. Sometimes it gets sugar bloom too, which looks spotty. Nobody likes melted chocolate!

The Big Problem

Chocolate has to go from one place to another. Factories make it. Trucks drive it to stores. Sometimes they go very far, even to other countries. But on hot days, regular trucks do not keep chocolate cool.

So what is the answer? The answer is a refrigerated truck!

What Is a Refrigerated Truck?

A refrigerated truck is like a big, cool box on wheels. It is not just a normal box truck. It has a special system called a reefer unit. The reefer keeps cool air inside. It makes sure food like chocolate, ice cream, and fruit stay safe and yummy.

How Does the Refrigeration System Work?

The refrigerated truck has these parts:

  • Refrigeration Unit: This is the engine that does all the cooling work.
  • Compressor: Squeezes the special air (called refrigerant) and moves it around.
  • Condenser: Makes heat go out of the truck.
  • Expansion Valve: Lets the air move right.
  • Evaporator: Soaks up all the heat inside.
  • Insulated Walls: Thick walls stop hot air from coming in.
  • Thermostat: You pick the best temperature and the truck keeps it.

The truck pulls hot air out and blows in cool air. Air keeps moving all around the chocolate, making sure it cools every bite. No hot spots!

Even the way you pack the truck matters! We load chocolate nice and neat, so air can go around each box.

What Temperature Does Chocolate Need?

Chocolate likes it not too cold, not too hot. The best temperature is 10°C to 18°C (50°F to 65°F). That stops melting but does not freeze the chocolate.

Humidity (wet air) is a problem too. If the air is too wet, water sits on the chocolate and makes it spotty. The best humidity is 50-55%. Our trucks control both temperature and humidity. That keeps chocolate from getting fat bloom or sugar bloom.

How Do We Make Sure Chocolate Stays Cool?

Before we put chocolate on the truck, we cool it down.

We call this pre-cooling. It is important! When loading the chocolate, we work fast so it never gets warm.

We use top tech inside our trucks:

  • Data loggers: These watch and record the temperature.
  • GPS and wireless sensors: These show us, in real time, what the temperature is and where the truck is.
  • If anything is wrong, we get an alert and fix it quickly.
